Berry Crumble

2 Servings

1 Cup Strawberries, Sliced Thin
1 Teaspoon Vanilla Extract
1/2 Teaspoon Cinnamon
2 Melba Toast
2 Package Of Sweetener

This recipe makes two servings.

Toss berries with vanilla extract and sweetener and place in two ramekins. 
In a small bowl, coarsely crumble the melba toast and add cinnamon and sweetner. 
Sprinkle melba toast mixture on berry mixture and bake at 350 degrees
for about 20 minutes or until the berries bubble slightly giving off their juice.

Bruschetta

1 Serving

1 Serving Melba Toast
1 Cup Tomato, Chopped
1/2 Teaspoon Basil
1/2 Teaspoon Oregano
1 Ounce Cilantro
1/2 Teaspoon Garlic Powder
Salt And Pepper, To Taste
1/2 Lemon, Juiced
3.5 Ounce Chicken Breast, Boiled And Chopped

Mix tomatoes with spices and lemon juice and set mixture in fridge.
Boil chicken, drain and then chop and add spices to taste. 
Mix together chicken with tomato mixture and then spoon on top of melba toast - eat the remainder with a spoon.

Buffalo Chicken Tenders

4 Servings

14 Oz Chicken Breast Tenders
1/2 Cups Vinegar
1/2 Cups Water
3 Tablespoon Cayenne
1/2 Cups Chili Powder

Mix the vinegar, water, and cayenne pepper.  Add chicken to the marinade and let marinate in refrigerator for at least 2 hrs.  Put chili powder on a plate and dip each tender in chili powder then place on rack in baking pan.  Bake at 350 for 15-20 mins or until chicken is no longer pink.
